Erykah’s Deer Chili

Ingredients

1 stalk of Celery 

1 Yellow Onion 

1 Green Bell Pepper 

2 pounds of ground beef 

2 uncased deer sausage links 

Paprika Powder 

1 packet of Chili seasoning 

Onion Powder 

Cumin Powder 

 


** Measure seasonings with your heart and taste as you go**

 


1 6 oz. Can of Tomato Paste 

2 10 oz. Cans of ROTEL Original 

1 28 oz Can of Tomato Sauce 

1 28 oz Can of Diced Tomatoes 

2 10 oz Can of Red Kidney Beans 

1 10 oz. Can of Black Beans 

 

Instructions

Heat oil in Dutch oven or 12 quart pot. Add ground beef and crumbled deer sausage.  Cook meat until brown and drain grease and set meat aside. Add celery, onion and bell pepper. Sautée vegetables until soft and add all seasonings listed. Add meat back to pot and add all canned goods starting with tomato paste. Add canned tomato sauces, rotel and canned beans. Taste test to determine how mild and spicy you prefer. Simmer on low for 30-45 minutes. Enjoy!!
